Sorry, I feel strongly about this.

Raj pavilion, near circus is always fantastic, not least the most friendly
and ridiculously silly staff. Most dishes not very healthy at all, as they
see taste as more important. Take aways can take a while (they often say 50
min), they are victims of their own popularity. Going in is much more fun.
Try begum massala, tarka dhall.

Chilka house, possibly one of the most understated, Baker street. One of the
only places in brighton to do the fantastically hot Paal, but do a much more
interesting range of food than most places, and is run by possibly the
nicest man in the world. Been running 20 years. Food ready by magic forces
in about 3 minutes. Happy to make anything you like elsewhere. Try zalfrey
and rogan.

Empire on Lewes road finally is great. Try mali kufta starter and mattar
paneer (which I believe they make with economy cheddar, but it's
fantastic!). Take away only.

All I can only judge on vegetarian dishes, so I can't speak for the meat!

oh man - it's always the way with restaurants in brighton - they peak and
then nose dive!!
Guess it does mean there's a constant turn around - not good for the people
who invest in these places though!!

I'll wipe that one off my list then :(
