According to a few sources I've checked on the web (including good ol'
Wikipedia), S-video only uses two channels -- one for brightness
(luminance or 'Y') and another for colour (chrominance or 'C').

I'm guessing a SCART converter would mix these two channels in to a
single composite channel rather than breaking it up in to RGB, hence
the drop in quality.
