S-video uses two channels for video, one for brightness and one for
colour, while SCART uses either three (red, blue and green) or one
(composite video). As you are converting the DVI signal to two
analogue components for S-video, the SCART converter will likely be
outputting the video in just one composite signal. Compositing the two
signals causes a big loss in detail.

At least, that's my grasp on it...
