I've found UKreg.com (run by Fasthosts) to be pretty good and not too
expensive (£2.95 exc. VAT/year for .co.uk).
They give you plenty of options, give you plenty of notice when you're
up for renewal, and let you set your own nameservers, IPS tags, DNS
records etc. I don't know about transferring away, but if they let you
set your own IPS tag then wouldn't it be impossible for them to stop
you transferring if you wanted to?
