Well I was lucky - my father in law is pretty cool at this stuff. I'm not
sure I would entirely trust my own judgment yet :)
So far though I've learnt you want to pick the ones that have very stout
wide bases (about 1 inch wide usually). They are very firm in texture - with
sponge like appearance underneath the cap - they don't have 'gills'. Some
are yellow/brown but others have a slight reddish tinge.

It's very deep yellow and great fried - they were the only 'gilled' ones
that we picked up.
Definitely not any red ones with spots... :D
You need to work with your book I guess - and boil them for a good hour
before eating (split with a knife to check for worms before cooking). They
make a great soup - just need some olive oil and a few vegetables in there
(or stock).
I still want to find some truffles but I need to train our dog ;)
