Wait until it randomly crashes and corrupts the mail store which means
you loose months of email. Then switch to mail.app and watch that do
the same thing :)

Vector all your incoming and outgoing mail via gmail, so you have a
decent, searchable archive, for whatever mail client you end up
choosing, and then install

So you can use iCal on the Mac with your Exchange server.

(Of course, what you ought to do is just ditch the desktop apps,
accept your Google overlords and make everyone in the company use
gmail + Google calendar :)
