Run a cron job to dump some system stats every minute into a file, to
help with a post-mortem: things like server load, free disk/memory,
number of processes, etc. Do this every minute. Done this before on
live servers and it's been really handy when trying to diagnose
problems after-the-fact.

If you can't get apache to dump stats itself you could try grepping
the output of ps for number of httpd processes, their size, etc.
