Or buy autopano (http://www.autopano.net/) it is an amazing piece of 
software.  You don't need any special equipment, you don't have to set 
the exposure manually, you just shoot a load of pictures, throw them at 
the programme and it stitches them with no user intervention.  It is 
based on the autostitch research which can be found at 
http://www.cs.ubc.ca/~mbrown/autostitch/autostitch.html - try it and if 
you like it try autopano which gives you more control over the final result.
